Elmo’s Dutch Baby Pancake: a recipe from the street

My son Ethan loves to cook these days, and he’s always looking for new cookbooks for inspiration. On a recent trip to the Rochambeau library, he found C is for Cooking: Recipes from the Street by Susan, M.S., R.D. McQuillan. Although my now six-year-old son is not as obsessed with Sesame Street as he was at three or four, he is still a fan and was captivated by the colorful pictures of his furry Muppet friends and the delicious-looking dishes. It turned out to be a great cookbook with a variety of healthy, yummy recipes–easy-to-follow directions and helpful cooking hints for kids.

We made a number of recipes from the book, but this is one of my son’s hands-down favorites:

Elmo’s Dutch Baby Pancake with Buttery Apples
This puffy pancake bakes in a cake pan and is topped with sautéed fruit–it may look like dessert, but it is actually a wholesome breakfast food.

Prep time: 10 minutes
Cooking/baking time: 18 minutes
Yield: 4 servings

Ingredients:

  • 2 eggs
  • 1 teaspoon vegetable oil
  • ½ cup low-fat milk
  • ½ cup all-purpose flour
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 tablespoon butter
  • 2 large apples, peeled and sliced
  • Confectioners sugar for dusting (optional)

Equipment:

  • 9-inch cake pan or baking dish
  • Medium bowl
  • Fork
  • Measuring cups
  • Measuring spoons
  • Large skillet
  • Large spoon
  • Wire-mesh sieve

1. Preheat oven to 425F. Grease a 9-inch nonstick pie pan, shallow baking dish, or skillet with ovenproof handle.

2. Crack the eggs into a medium bowl. Make sure none of the shell falls into the bowl. Wash hands after cracking eggs. Use a fork to beat together the eggs, oil, and milk. Stir until well blended.

3. Add the flour, sugar, salt, and cinnamon to the bowl. Stir until smooth batter forms. (A few small lumps are okay.) Pour the batter into the greased dish.

4. Bake the pancake for 10 minutes. Reduce the heat to 350F. Bake until the pancake is puffy and lightly browned all over, about 5 to 8 minutes longer.

5. Meanwhile, heat the butter in a large skillet. Add the apples and sauté, stirring often, until they are tender and lightly browned, about 10 minutes.

6. To serve, spoon the apples over the pancake.

7. Use a wire-mesh sieve or other fine-mesh strainer to dust the pancake with confectioner’s sugar (optional).
