Grocery News: Acai Popsicles

All popsicles are yummy and fun to make with kids but these are really special. I LOVE these popsicles. Apparently, people who know about these things consider acai (ahh-sigh-ee) a miracle berry. Acai berries are considered a superfood because they have many, many more antioxidants than blueberries, red wine, pomegranates, etc. They grow on palm trees in the Amazon rainforest and taste a lot like blueberries and frozen pulp. Find them in Whole Foods Market near the other frozen fruits. Acai popsicles are very good for both you and your growing children, and they’re guaranteed to make them smart, beautiful, and charming.

3. Food on a stick=happy times
4. Nutritious enough for breakfast

This recipe is adapted from the wonderful book, Super Natural Cooking by Heidi Swanson.

ACAI POPSICLES

Ingredients
– 3.5-oz. package frozen acai puree (Sambozan brand is available in the frozen fruit section of Whole Foods—four 3.5 oz. packages are sold together.)

– 2 cups whole milk vanilla yogurt

– Sweetener of your choice to taste (I use sugar, but to keep the wholesome vibe going, you might prefer honey, stevia, succanat, etc.)

Directions
In a blender, combine acai with one-half cup of yogurt. Whiz until smooth. Sweeten to taste.

Divide the remaining yogurt among six 4-oz. popsicle molds (or dixie cups). Top each with acai mixture. Use the handle of a teaspoon to swirl the acai into the plain yogurt, just enough to make pretty swirls.

Freeze until set, at least three hours or for as long as you like.

    I just tried this Juice at Whole Foods and had to buy it – I love it! Especially the Pomegranite flavor. Thanks for posting!
